Healthy Zero Waste Pancakes

Don’t give up your Sunday pancakes in the goal to be Zero Waste with this package free pancake recipe. Enjoy a delicious healthy breakfast (or dinner) using only two main ingredients!

These are the perfect Zero Waste pancakes as the two main ingredients are compostable whilst flour can be sourced from bulk bins and vanilla essence in glass. On top of being Zero Waste these pancakes are great because there’s no added sugar as the bananas provide plenty of natural sweetness. You wouldn’t even have to count it as a cheat meal and the kids won’t know the difference either!


The main ingredients for these Zero Waste pancakes are bananas and eggs. So don’t throw out those squishy overripe bananas as they are perfect for this recipe. You could even freeze your ripe bananas until you’re ready to make these pancakes on the weekend.


Depending on how you like your pancakes you could just use bananas and eggs which creates a thinner pancake. However if you’re like me and enjoy a thicker pancake you can just add flour until you reach your desired batter texture. You could even experiment with different flours if you wanted, I’ve used ground oats before to add in a bit more fiber which resulted in a heavier pancake.

Using only two main ingredients this recipe is perfect when you’re short on groceries and want to wait till the markets on the weekend. Or you could customise them to your heart’s content!


Mix In Ideas

So why not mix it up! This recipe is so adaptable you’re only limited by your imagination. You could try adding in blueberries, apple chunks, peanut butter, protein powder, cinnamon, vanilla essence, coconut, chopped nuts, raisins, seeds or even try stuffing them with Nutella!


Topping Ideas

Everyone loves the classic butter and maple syrup on their pancakes but there are so any other delicious options available. Toppings to try include lemon and sugar, fresh fruit (blueberries, apples, bananas, and strawberries), honey, yogurt, chocolate, jam, berry coulis, ice cream, peanut butter or even go savoury with bacon and eggs on the side.

Zero Waste Pancakes (Serves one)

Ingredients

  • 1 large Banana

  • 2 Eggs

  • Dash of vanilla essence

Optional:

  • Flour of choice

Method

  1. Mash the banana and mix in eggs (use a blender for a smoother texture)

  2. Add flour a spoonful at a time until you reach your desired texture

  3. Add any other personal add ins

  4. Fry in pan with coconut oil or other oil of choice

  5. Top with your favourite toppings and enjoy!
